SALMON WITH CUCUMBER RELISH

INGREDIENTS

½ cup diced red onions
½ cup white wine vinegar
2 shallots, minced
2 garlic cloves, minced
1 teaspoon minced fresh ginger
1 teaspoon grated orange rind
¼ teaspoon low-sodium soy sauce
2 cucumbers, thinly sliced
1/8 teaspoon ground black pepper
4 salmon fillets (6 oz. each)
1 tablespoon Filippo Berio Olive Oil

DIRECTIONS

In a large no-stick frying pan over medium-high heat, combine the onions, vinegar, shallots, garlic, ginger, orange rind, and soy sauce. Bring to a boil, stir and cook for 30 seconds. Remove from heat. Add the cucumbers and pepper. Set aside.

Rub the salmon with olive oil and grill or broil for 4 to 5 minutes per side. Serve topped with the cucumber relish.
