Salmon with Cucumber Relish

INGREDIENTS

This recipe features Filippo Berio Olive Oil

  • ½ cup diced red onions
  • ½ cup white wine vinegar
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon grated orange rind
  • ¼ teaspoon low-sodium soy sauce
  • 2 cucumbers, thinly sliced
  • 1/8 teaspoon ground black pepper
  • 4 salmon fillets (6 oz. each)
  • 1 tablespoon Filippo Berio Olive Oil

Method: Stove Top Cooking

  1. In a large no-stick frying pan over medium-high heat, combine the onions, vinegar, shallots, garlic, ginger, orange rind, and soy sauce. Bring to a boil, stir and cook for 30 seconds. Remove from heat. Add the cucumbers and pepper. Set aside.
  2. Rub the salmon with olive oil and grill or broil for 4 to 5 minutes per side. Serve topped with the cucumber relish.
